For 120 years, Market Forge has been a world leader in equipment for the food services industry. Founded in Boston, the company’s first client was a meatpacking firm that wanted to place wooden shelves with sanitary metal shelving. In the 1920s, Market Forge developed the world’s first stainless steel steam cooker. The firm continued to grow, focusing on steam cooking for commercial kitchens. Today Market Forge produces more than 350 steam cookers for a variety of needs. Its products include steamers, steam jacketed kettles, tilting skillets and convection ovens. Market Forge continues to expand as chefs discover that steam cooking does not only cook large quantities quickly, but also delivers excellent food.
